Today: I made Muffins.

Muffins are simple to make, and can be easily adjusted to your own particular taste.
Today I made some Blueberry and White Chocolate muffins. The choice of flavour was related to the ingredients available:

Ingredients:
275g plain flour
1 tablespoon baking powder
75g caster sugar
half tbsp salt
2 eggs
225ml milk
110g butter
1 tsp vanilla extract
75g white chocolate (chips or crushed)
250g of fresh blueberries

Method:
Pre-heat oven to 200C
Place 12 muffin cases in to a tray
Sieve the flour, baking powder, salt in to a mixing bowl.
In a separate bowl, beat the eggs and add the sugar, milk, butter (melted) and vanilla extract.
Fold the dry mixture in to the wet mixture, and mix gently to form a lumpy batter.
Add the blueberries and chocolate, don’t over mix.
Divide the mixture between the muffin cases and bake for about 20 minutes.

Depending on your oven, the cooking time may vary.

Try varying the flavourings, in place of chocolate and blueberries I suggest chopped and rinsed Glacé Cherries (about 250g of mixed red, yellow and green works well). Consider using a chopped banana (one for 12 muffins) and about 75g of dark chocolate chips.
